  1. 150 gm chopped button mushrooms 
  2. 1/4 cup diced green zucchini
  3. 1 cup diced cherry tomatoes
  4. 1/4 cup diced carrots
  5. 1 mid-sized diced red bell pepper 
  6. 1 ½ cups cubed soft tofu
  7. 2 stalks of sliced lemongrass
  8. 6 kaffir lime leaves
  9. 4 basil leaves
  10. 1 teaspoon OrientAsian Thai Red Curry Paste 
  11. 1 teaspoon OrientAsian soy sauce
  12. 1 teaspoon brown sugar
  13. 2 tablespoons lemon juice
  14. Salt as per taste

How to Make Tom Yum Soup Recipe

  1. Put the saucepan over low heat. Pour 4 cups of water into it.
  2. Crush the kaffir lime leaves and along with sliced lemongrass add them to the water. Doing so releases their flavor. 
  3. Turn the heat to medium-high, and bring the concoction to a boil. Let it boil for about five minutes so that the flavors are released.
  4. The color of the water will turn green when you’re finished. Now your lemongrass stock is ready.
  5. Use a strainer to separate the stock from the leaves. 
  6. Pour the lemongrass stock back into the saucepan.
  7. Add the diced cherry tomatoes, zucchini, bell pepper, carrots, and mushrooms into the mixture.
