Ingredients of Thai Vegetable Stir Fry
For sauce and veggies
- Ginger root (peel it before using) – 1 tablespoon
- Garlic cloves – 2 pieces
- Orient Asian’s Red Chilli Paste
- Half a bunch of fresh coriander (cilantro) leaves and stem
- Lime juice and zest – 1 lemon
- Fish Sauce – one tablespoon
- Canned coconut milk – 250 ml or 1 cup
- Raw cashew nuts (roasted) – 150 ml
- Mushrooms (shiitake is preferred, in case you can’t find it you can any edible mushroom) sliced – 75 g
- Carrots sliced – 2
- Broccoli – broken into florets – 1
- Cauliflower – broken into florets – Half cauliflower
- Green Beans or snow peas – 10 (approx.)
- Red capsicum sliced – 1
- Firm organic tofu cut into cubes – 180 g
- Orient Asian’s Thai Green Curry Paste
- Noodles – boiled
For Garnishing
- Spring Onions sliced – 2
- Half a bunch of fresh coriander (cilantro) leaves
- Basil Leaves – 3 – 4

Recipe For Thai Vegetable Stir Fry

● Step 1
The first step to preparing Thai vegetable stir fry is pretty simple. Take a saucepan or a medium-sized mixing bowl. Place all the sliced and diced veggies together (carrot, cauliflower, broccoli, mushrooms, coriander, snow peas). Mix all the veggies and sprinkle a pinch of salt. Mix well.
● Step 2
For the next step in the recipe of Thai vegetable stir fry, you will need a wok. Place the wok on the stove and add one tablespoon of vegetable oil. Heat the oil over medium flame. Once the oil is ready, add spring onions and stir fry them for one or two minutes (or until the onion starts to soften). Thereafter add the mixed veggies to the wok and add a few tablespoons of water. Cook the vegetables till they soften (but retain a bit of crunch). Then add the roasted cashew nuts, and stir fry for another minute.
● Step 3
Once the veggies are fried, add another tablespoon of oil to the wok or pan, add cubes of tofu and cook it till the tofu turns brownish on all sides.
● Step 4
This step is for cooking the sauce for Thai Vegetable Stir fry. Once the veggies are cooked, place them on a separate platter, or take another pan for cooking the sauce. If you take another pan, heat it on low flame. Thereafter, the procedure is the same. Add a few tablespoons of water, then add ginger and garlic cloves. Thereafter add two tablespoons of soy sauce, one tablespoon of Orient Asian’s Red Chilli Paste, and one and a half spoons of Orient Asian’s Thai Green Curry Paste. Mix them well.
● Step 5
This step in the Thai Vegetable Stir fry recipe includes coconut milk and fish sauce. Add coconut milk and fish sauce to the wok and mix them. After a minute, sprinkle some sugar (prefer palm sugar, if not available, use regular sugar), and mix well. Stir fry the sauce continuously so that it doesn’t stick to your wok/ pan. Cook it for half a minute or one minute.
● Step 6
Lastly, add your stir-fried veggies to the sauce to cook delicious Thai vegetables Stir fry and mix well. Then add the boiled noodles and mix well. Let it sit for a minute or two so that the veggies and noodles are immersed in the delicious taste of the sauce. Thereafter, add the lime juice and cook for another minute. Mix the ingredients well.
Once it is cooked, serve hot. You can garnish the Thai vegetable stir-fry with basil leaves and coriander and add a pinch of lemon zest on top.
