Ingredients:

  • 2 tsp oil
  • 4-5 cloves of garlic
  • One medium-sized onion
  • Salt to taste
  • Three different mixed bell peppers
  • ½ tsp herbs
  • One zucchini.
  • 1 tsp water
  • 3 tsp of tomato puree
  • 1 tsp of red chilli powder
  • 1 tsp of sugar
  • Orient Asian Mexican chutney
  • ½ cup kidney beans
  • 1 cup of rice

Prep:

  1. Roughly chop 1 tsp of garlic.
  2. Finely chop one medium-sized onion.
  3. Chop a bowl full of mixed bell peppers.
  4. Chop half a bowl of zucchini.
  5. Cook ½ cup of kidney beans by either boiling them in water or cooking them in a pressure cooker.
  6. Cook 1 cup of rice.

Pro Tip: Squeeze five drops of lemon when cooking the rice; also add 1 tsp of oil. The lime juice and the oil make the rice less sticky and loose, perfect for this Mexican rice recipe.

Note: This dish can be made with leftover rice from the afternoon or night before. In fact, last night’s rice makes the dish taste even better.

Cooking Instructions for vegetarian Mexican rice recipe:

Step 1: Add 2 tsp oil to a hot pan.

Note: Make sure the pan does not get too hot. Too hot a pan will instantly burn the chopped garlic.

Step 2: Add 1 tsp of chopped garlic to the pan.

Step 3: Saute till the garlic is light brown.

Step 4: To the garlic, add a medium-sized chopped onion.

Step 5: Cook the chopped onion until translucent in colour.

Step 6: To the pan, add a pinch of salt.

Note: The salt accelerates the speed of cooking the onion.

Step 7: Add a bowl of chopped mixed bell peppers to the pan.

Step 8: To it, add ½ tsp of mixed herbs. They bring along magical flavours and aroma.

Step 9: Add half a bowl of chopped zucchini.

Step 10: Add 1 tsp of water and mix well.

Step 11: Cover the pan with a lid and cook for 3-4 minutes.

Step 12: After 4 minutes, add 3 tsp of tomato puree to the pan.

Step 13: Add 1 tsp of chilli powder to the pan.

Step 14: Add 1 tsp of sugar to it.

Step 15: Add 4 tsp of Orient Asian Mexican sauce/chutney.

Step 16: Saute for 30-45 seconds.

Step 17: Add ½ cup of kidney beans to the pan.

Step 18: Add salt to taste.

Step 19: Add 1 cup of cooked rice to the pan and stir until thoroughly combined.

Step 20: Take it off the heat and serve hot with Orient Asian Mexican chutney at the side.
