For bread :

  • Flour: 300g or 2 and ¼ cup + 1 tablespoon (loosely packed)
  • Lukewarm water: 175ml or ¾ cup (considering 1 cup is 236ml)
  • Salt: 4g or ¾ teaspoon
  • Sugar: 19g or 1 and ½ tablespoon
  • Butter: 30g or 2 tablespoons + ½ teaspoon
  • Yeast: 3g or 1 teaspoon

 

For topping :

  • Finely chopped garlic: 2 to 3 teaspoons
  • Shredded mozzarella cheese: 150g
  • Finely chopped parsley: 2 tablespoons
  • Sesame seeds

 

For egg wash (optional):

  • 1 egg

Preparation of the dough:

  • Add lukewarm into a bowl. Make sure the water is neither too hot nor too cold and has a temperature of about 95℉
  • Eventually add sugar, yeast and salt
  • Dissolve all the ingredients in water
  • Add melted butter or softened butter or vegetable oil
  • Then add flour and mix everything to form a big mass of dough
  • Transfer this dough onto a clean surface
  • Knead the dough thoroughly

 

You need not be too strict when it comes to the measurements for the bread. However, you must know the final consistency of the dough. Often the consistency tends to differ if you use cup measurements instead of using the ingredients according to their weight, climate of the place or the brand of the flour used.

In these cases, if you notice that your dough is too sticky even after kneading for 5 to 6 minutes, add in a little extra flour, about 1 tablespoon at a time for getting the right texture of the dough.

  • Place the rolled dough balls onto a baking tray which is lined with parchment paper
  • Cover them with a plastic film

Proofing the dough:

  • Allow the dough to sit and rise for roughly around 60 to 70 minutes
  • In case your place is colder, you can consider keeping the tray in the light of the oven or a warmer environment

 

Topping the bread dough with cheese:

  • After an hour of proofing, top the dough with cheese, chopped garlic and fresh herbs
  • Before you top them with cheese, you can also give it an egg wash and sprinkle sesame seeds on top

 

How to make egg wash:

  • Crack one egg into a bowl
  • Beat it properly with the help of a fork
  • Add one tablespoon of water or milk and it would lighten the mixture
  • In case you wish to have a dark egg wash, you can simply use the yolk and add a pinch of salt, as it would liquefy the yolk and be easier for you to spread

 

How to substitute egg wash

  • You can use about 2 to 3 tablespoons of milk instead of an egg wash as this would give the bread a wash of golden colour but would not give it shine
  • You can alternatively use olive oil instead of egg wash as this would give the bread a good shine and the subtle olive oil flavour to it

  • Bake the bread at 350℉ for about 18 to 20 minutes
